Blue schists at altitude, an effect of freshness, sapidity, morello cherries, jam, cherry, finesse. It's very, very good.
Aging: 2/4 in 228L Burgundy barrels aged 10 years and over 1/4 in truncated conical wooden maceration vats and 1/4 in sandstone amphorae.
Vinification: 7 days with whole grapes, then punching down to the body once per day for 6 days.
