Originally from San Diego, California, Jonathan Purcell moved to France in 2012 to study wine in Beaune. Already a fan of Burgundian wines having tasted bottles from his father’s collection, it was here that Jon developed his ideas of, and appreciation for, natural wines – some of his classmates were from large natural wine estates, and visiting winemakers and bars on a trip to the Ardeche was enough for him to pursue this approach.
After studying, Jon gained experience with David Croix and Philippe Pacalet, followed by working as a ‘tractoriste’ for Domaine de Montille and Domaine Matrot.
Jon made his first wine in 2016; a collaborative, négociant project with his friend Chris Santini, working out of Santini’s cellar in Auxey, and 2017 saw the first production of two wines under Vin Noé. This was the one and only year that Jon added sulphites to a wine, following previous experience of sulphiting as simply one of the steps of winemaking. Since then, he has added zero sulphites to his wines.
After several years working as a négociant winemaker, Jon took on 0.8 ha in Saint-Aubin and Puligny-Montrachet from Jean-Jacques Morel, a retiring winemaker renowned for organic, no-till viticulture. A year later, in 2021, Jon was able to move into Morel’s former cellar in the village of Gamay, near Saint Aubin.
