After nearly two decades of experience in winemaking, Moritz Schilling is now cultivating his own vineyard in the volcanic soils of Sasbach am Kaiserstuhl, where he also lives. As of 2025, his project has grown to about one hectare, all farmed organically with a strong focus on sustainable viticulture. In the cellar, he follows a low-intervention approach: native fermentation, no fining or filtration, and minimal added sulfur.
His first independent vintage was in 2022, a Spätburgunder (Pinot Noir) fermented with whole grape clusters and aged for 22 months in barrel, resulting in a very small release of just 400 bottles. Despite the tiny production volume, the wine has already sparked attention among international wine circles.
Moritz sees himself as part of a wider cultural movement, drawing inspiration from winemakers like Patrick Meyer in Alsace.
