Ormiale started in 2007 and is located in the north of Entre-deux-Mers, 15 km south of St-Emilion and 8 km from Castillon la Bataille.
Our Ormiale red wine is vinified and bottled at the property in the Bordeaux Supérieur Contrôlée - Grand Vin de Bordeaux. The vineyard plots cover an area of 2ha, are biodynamically certified Demeter and located in Côtes de Castillon and Côtes de Francs: Merlot, Cabernet Sauvignon, Carbernet Franc and Petit Verdot. The cellar is located to the north of Entre Deux Mers, in the town of Mérignas.
The harvest is manual and all the bunches have been destemmed by hand since 2010; then vatted by gravity in a tapered French oak vat and in stainless steel vats. Fermentation is started only with indigenous yeasts. Vinification lasts 4 to 5 weeks depending on the vintage. After the free-run wine has run off, the press wine is obtained with an old vertical press and aged separately.
The yield is 20 to 25 hectoliters / hectare. By comparison, the maximum yield authorized in 2009 for the Bordeaux Supérieur appellation is 59 hectoliters / hectare.
