nénu - Rasmus Aamand
We were introduced to Rasmus by a mutual friend. After we tried his small selection of three cuvées, we were immediately fascinated by his precise, clean and really beautiful wines. Rasmus is trained as a neurobiologist and worked as such in Denmark before he moved to Banyuls-sur-Mer in France to become a winemaker. His approach is a mix between scientific and playful, while always searching for quality and perfection.
For him, everything starts in vineyards where he looks for low PH levels in the grapes. This paves the way for using as little sulphur as possible, but Rasmus is not fanatic about using zero sulphur. In 2018, he lost a whole vintage experimenting with zero sulphur but the wines where not ready for it yet.
