We got introduced to Rasmus by a good friend in common. After we tried his small selection of three cuvées, we immediately got fascinated by his precise, clean and really beautiful wines. Rasmus is trained as a neurobiologist and worked as such in Denmark before he moved to Banyuls-sur-Mer in France to become a winemaker. His approach is a mix between scientific and playful while always searching for quality and perfection. For him, everything starts in vineyards where he looks out for low PH levels in the grapes. This paves the way for using as little sulphur as possible, but Rasmus is not fanatic about using zero sulphur. In 2018, he already lost a whole vintage experimenting with zero sulphur but the wines where not ready for it yet. We very much appreciate his curiosity and striving for perfection, his wines capture this spirit very well and we are more than excited about what is to come.
