Here is what Pauline and Carl say about their Spätburgunder:
Spätburgunder turns out to be one of the wines closest to our hearts, even more so with this vintage. Most work goes into this wine. We harvest the grapes for two different kinds of processing: The first two thirds for carbonic maceration for 13 to 14 days, the last third for skin fermentation for 12 days. A little bit longer than the years before. In 2023, we realized that the vinegar fly is approaching and we had to decide which of our red varieties to safe first. So we decided for the Spätburgunder grapes. We spent three whole days in Mandeler Dellchen, picking only perfectly healthy grapes on the first day and sorting a lot of on the last. It was really a matter of hours. But we were able to pick these wonderfully ripe grapes at just the right moment. Mandeler Dellchen is our favourite vineyard site, a southfacing steep slope where the grapes grow on red sandstone. With our Spätburgunder we aim for pure elegance and filigree aromatics, which is why we chose those two different ways of processing.
