Janus is a blend of pears from the ’21 and ’22 vintages. The base juice was fermented for three months in stainless steel, then bottled to finish fermentation. After a year in the bottle, Elias disgorged the Poiré: initially he hadn’t planned to, but he found it a little unstable and so he added 20mg SO2 at disgorgement. The result is a clear cider with a sparse and salty character. The labels are made from apple pomace and are waste-evasive wet glue labels.
