Pinot Noir from two parcels with an average of 70 year old vines.
Hand-harvested. Vinified and aged without added SO2. Parcels are vinified and aged separately. 100% whole cluster. 2-3-week ambient yeast fermentation and carbonic maceration in steel or wood tank. Minimal extraction by wetting the cap with buckets and 2-3 foot treads near the end of fermentation. Malolactic fermentation in tank.
Aged for 10-18 months in used barrels (228 L and/or 350 L). No fining, no filtration. Blended before bottling. Less than 10 ppm SO2 added before bottling.
