Riesling ‘22 was a great vintage, with an abundant yield and good acidity. Riesling is typically a late ripener but Olympia and Hannes harvest early; their strong foundation of biodynamic treatments reducing any unwanted, harsh acidity.

Once harvested, the grapes are crushed underfoot and left for a day on the skins before pressing, before being given almost a year on full lees. A small amount of sulphur is added at bottling to give the wines a safe onward journey and to ensure that ‘no matter who opens the bottle, it's still the wine that we made.’ 

A bright wine with straightforward acidity, a herbal touch and a hint of lemon.
Works well with salty hard cheese.
