Ochsenäcker is the name of Schnitz & Butzen's home orchard with over 40-year-old mixed tree stock, located directly in Unterbechingen, about 300 metres from the winery.

Apples and pears were processed in roughly equal parts in 2021, resulting in a harmonious cuvée with a very balanced sweet-acid play. The floral notes of the pear meet the fresh acidity of the apples.

After 24 months of aging on the lees, the sparkling wine was hand-disgorged. 11g/l dosage.
