Mimosa is made with 100% Jaen, known outside Portugal as Mencía, and a variety which is indigenous to the western part of the Iberian peninsula. The grapes were de-stemmed and placed in a traditional Portuguese lagar; a huge granite tank with capacity for around 3000 kilos of grapes. Here the grapes were trodden underfoot for an hour, every day for three days, crushing the grapes as they macerate and begin to ferment. After the juice was extracted, the remaining must was pressed with a hydraulic press to gather the very last drop, which were then added to the stainless steel tanks.
