“Opok” is the regional name for the sedimentary deposit soils in our region. Lime marl influences this Sauvignon blanc. The grapes are harvested from the lower third of the steep vineyard slopes, which have a large proportion of clay in the soil. The vines are stemming from saplings taken from chosen old vines from the region.
Harvest by hand, grape selection in the vineyard, destemming, no additives, no filtering of the must, gentle pressing over a period of 4 hours, spontaneous fermentation (no clone yeasts) in large oak barrels, 20 month aging in large oak barrels.
First impression is yellow fruit, acidity, bitterness (like from lemon peel) and a hint of salt somewhere. With time and air, there is more typical yellow and juicy Sauvignon Blanc fruit. Our recommendation is to decant the bottle and to serve it not too cold.
Works as an everybody's darling.
