Elevation, saltiness, length, emotion, really very very very good.
Aging: 2/4 in 228L Burgundian barrels aged 10 years and over 1/4 in muid and 1/4 in sandstone amphorae.
Vinification: 7 days with whole grapes, then punching down to the body once per day for 6 days.
On the other hand, 5% of grapes on granite go into a small maceration tank and I let it go into acetate, after a week I pick it all up at once, the temperature rises to 40° and the microorganisms know how to function. Then I assemble what is for me an “umami” bomb, which is the dried tomato in the bowl of Ramen.
