For us, Cabernet means continuity. This warm climate vineyard, located close to the lake and deeply rooted in soil of clay and limestone, was the first area where we started experimenting with whole cluster fermentation 5 years ago. A blend of Cabernet Franc and Cabernet Sauvignon from Vörösmál-Aszófő, harvested between the 10th and 17th of September. Whole cluster fermentation in open vats for more than 2 weeks with some of its own juice added on the bottom, followed by a quick pressing and slow fermentation in several 225-liter oak barrels. The character is fruity yet immensely complex and layered with surprising details where aromas are stretching from strawberry field to sneaker shop. One year aging, unfiltered, unfined, no SO2 added.
