Pinot Noir planted in 1970s on limestone and clay-limestone in Ladoix / Mâconnais.
Hand-harvested 100% whole cluster. Vinified and aged without added SO2. The grapes from the Mâconnais are picked 10 days before those from Ladoix and are placed in a tank to begin carbonic maceration. The grapes from Ladoix are picked and layered in alternating tiers between the already-fermenting Mâconnais grapes in a 55 HL wooden tank. 1-week ambient yeast fermentation and carbonic maceration. Minimal extraction by wetting the cap with buckets and 1 foot tread near the end of fermentation. Malolactic fermentation in tank.
Aged for 10-12 months in used barrels (228 L and/or 350 L). No fining, no filtration. Less than 10 ppm SO2 added before bottling.
