Zappa! (Hoe!), it is a Zibibbo wine that comes from a single plot. The age of the vines exceeds a century. The winemaking is done as it used to be: 20-day maceration on the skins, vinification and aging in chestnut barrels. The tonneaux is left outdoors under a roof so that the temperature changes between day/night and winter/spring accelerate the oxidation processes of the organic compounds, allowing the release of inorganic ions in hydroalcoholic solution, i.e. components with a saline flavour. It is bottled exclusively in magnums (300 in total) and all the bottles are hand painted by Nicoletta.
