Here also elevation, saltiness, length, emotion, really very very very good. Here again I am very happy with the adaptation of Jules Chauvet's vinification to Alsatian grape varieties, it purifies and adds elegance.
Aging: old barrel more than 100 years old in unused condition.
Vinification: 7 days with whole grapes, then punching down to the body once per day for 6 days. I let the vat go a little acetate at the start of maceration, it gives fruit and again this "umami" side. Truly the Gewürztraminer is re-visited.
