Trollinger (think of a 'German Poulsard'), 40-year-old vines. South-facing parcel on red marl at the Untertürkheimer Mönchsberg. Handpicked grapes were whole-bunch and spontaneously fermented in 1000l vats. 10 days on the skins, one year on full lees in old 225l oak barrels before filling unfiltered by gravity.
