Another sublime cuvée from Max. Trio Sauvage is 60% Silvaner (directly pressed) and 40% Pinot Gris and Chardonnay (macerated together on skins) melting together to one beautiful flower. Developing very well after opening (decanting is possible). Beautiful bright pink-orange colour. The nose, with a light reductive note at the beginning, keeps opening up and changing. Exotic fruit to plum cake. Lively acidity, mandarine and minerality in the mouth. Try it with some hard salty cheese and sourdough-bread.
