The grapes, Pinotin and Cabertin, are rigorously sorted - selected by hand at the moment of picking, again on a sorting table in the vineyard, and for a third time when they reach the winery - a process which ensures that only the healthiest fruit reaches the press. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eIn 2023, 70% of the grapes were left as whole bunches, macerated cold for around eight days and pressed once the tannin extraction had reached the desired level.
