Here is what Pauline and Carl say about Weiss:
Weiss is Weiss. Just as bright and light as the last vintage. The varieties remain the same: Scheurebe, Bacchus and Müller-Thurgau make a wonderful aromatic and energetic match. The early harvest results in a playful acidity, low alcohol and a beautiful clear pallet. Like last year, we worked with short maceration times which extracts the aromas and adds a little grip. The destemmed berries rested for around twelve hours before being pressed. Each variety was processed separately and the three juices fermented in big wooden barrels and were fused to become one right before bottling. By early bottling we keep the rest of the CO2 that developed during fermentation in the wine, which creates a slight fizz and captures the young and fresh character. Pure joy!
