Take Three (name and label are based on Take Five) is one third each of apple, pear and quince, with all of the fruit fermented for three months in old barriques. Take Three was disgorged 2023, with 10mg SO2 added at this point. The slight addition of sulphur has, in Elias’ opinion, done it a lot of good, giving it significantly more clarity and expression. Intense quince fruit, well-integrated oxidation and beautiful concentration. The labels are made from apple pomace and are waste-evasive wet glue labels.
